Scrambled Eggs with Red Bell Pepper

These scrambled eggs are perfect to make when you have some red bell pepper you need to use up.

Ingredients

  • 6 eggs
  • 1/2 red bell pepper
  • 2 tbs olive oil
  • salt to taste

Instructions

  1. Crack the eggs into a bowl and beat with a fork for a couple of minutes.

  2. Dice the bell peppers into small pieces.

  3. Heat up a skillet over medium heat. Add the olive oil. Once hot add the diced bell pepper.

  4. Cook for a few minutes or until the pepper has slightly softened.

  5. Add the beaten eggs to the skillet. Stir gently until cooked through. This should only take a few minutes.

  6. Serve and enjoy!
