These scrambled eggs are perfect to make when you have some red bell pepper you need to use up.
Crack the eggs into a bowl and beat with a fork for a couple of minutes.
Dice the bell peppers into small pieces.
Heat up a skillet over medium heat. Add the olive oil. Once hot add the diced bell pepper.
Cook for a few minutes or until the pepper has slightly softened.
Add the beaten eggs to the skillet. Stir gently until cooked through. This should only take a few minutes.
