Milanesa de Pollo

Milanesa de pollo is an easy and delicious recipe for Mexican breaded chicken.

Ingredients

  • 1 1/2 lbs chicken breasts cut into thin slices
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 eggs
  • 1 1/2 sleeves of saltine crackers
  • 1/2 cup canola oil

Instructions

  1. Cut the chicken breasts into thin slices. I was able to get 3-4 slices out of each breast.

  2. Put one slice in a plastic bag. Pound it until it's an even thickness. Repeat this step with the rest of the slices.

  3. Next combine the garlic powder, onion powder, salt and black pepper. Season all sides of the chicken slices.

  4. Crack the eggs into a bowl and beat until well combined.

  5. Then put the crackers in a new plastic bag and crush them until they are very fine almost powder like. I used a rolling pin to do this.

  6. One at a time dip the chicken slices in the egg mixture then put in the bag and shake until covered with the cracker crumbs. Repeat this step with each of the chicken slices.

  7. Heat up the canola oil in a skillet over medium high heat.

  8. Once the oil is hot add two slices of the chicken. Let them cook for two minutes.

  9. Then flip the chicken over and cook for another 2 minutes. Once the chicken is done transfer it to a paper towel lined plate to drain.

  10. Repeat this process with the remaining slices of chicken adding more oil to the skillet as needed.

  11. Serve and enjoy!
