Huevos con jamon is a delicious Mexican breakfast consisting of scrambled eggs and diced ham.
Thinly slice the jalapeno and the onion piece.
Dice the ham.
Crack the eggs into a bowl and beat with a fork for a couple of minutes.
Heat up the oil in a skillet over medium heat.
Then add the jalapeno and onion to the skillet. Season with salt and cook for about 3-4 minutes or until softened.
Next, add the diced ham to the skillet and stir it around and let it warm up for 1 minute.
Add the eggs to the skillet. Reduce heat to medium low.
Stir the eggs around constantly until they are cooked through. This will take just 2-3 minutes.
Remove skillet from heat.
Serve and enjoy.
