Pasta with Canned Tuna

Quick and flavorful tuna pasta made with canned tuna, sun-dried tomatoes, garlic, Creole seasoning, and Parmesan cheese. This easy meal comes together in about 25 minutes and is perfect for busy weeknights.

Ingredients

  • 2 cups elbow macaroni
  • salt for the pasta water
  • 3/4 cup sun dried tomatoes chopped
  • 2 tbs oil from the sundried tomatoes (divided)
  • 4 cloves garlic minced
  • 12 oz canned tuna drained
  • 1 tsp creole seasoning
  • 1/2 cup grated parmesan cheese divided
  • 2 tsp dried parsley

Instructions

  1. Bring a large pot of water to a boil and salt it well.

  2. Add the macaroni and cook for about 8 minutes, or until al dente.

  3. Drain the pasta, then toss it with 1 tablespoon of the reserved sun-dried tomato oil to help prevent it from sticking.

  4. Heat a large skillet over medium heat. Add the remaining tablespoon of oil, chopped sun-dried tomatoes, and minced garlic. Cook for about 1 minute, stirring frequently.

  5. Add the drained tuna and stir until well combined with the tomatoes and garlic.

  6. Add the cooked pasta, Creole seasoning, and half of the Parmesan cheese. Toss everything together until evenly combined.

  7.  Stir in the dried parsley. Serve with the remaining Parmesan cheese on top, or add more to taste. Enjoy
