Marinate beef with all meat ingredients. Let sit 25 minutes.
Heat oil over medium heat. Cook onion 3 minutes, then set aside.
Add more oil if needed. Stir-fry beef for 3 minutes until browned. Do this in batches if needed.
Add garlic and ginger. Cook 1 minute.
Pour in slurry and stir until the sauce thickens and turns glossy.
Return onions to the skillet and mix well.
