Ingredients

  • 1 lb ground beef
  • 1/2 white onion diced
  • 1 jalapeno chopped
  • 2 garlic cloves peeled and minced
  • 15 oz canned black beans drained and rinsed
  • 14.5 oz canned diced tomatoes
  • 1/2 cup tomato sauce
  • 1 cup frozen corn defrosted
  • 1 oz packet of taco seasoning
  • 4 cups water
  • salt to taste
  • blacker pepper to taste

Instructions

  1. Brown and crumble the ground beef in a pot over medium heat.

  2. Transfer the browned ground beef to a paper towel lined plate to drain. Leave about 2 tbs of grease in the pot.

  3. Then add the chopped onion and jalapeno to the pot. Season with salt and pepper. Cook for a few minutes. Then add the minced garlic and cook for another minute.

  4. Next, return the ground beef to the pot and add the taco seasoning and two cups of water. Stir well.

  5. Then add in the black beans, diced tomatoes, tomato sauce, corn and the remaining two cups of water. Stir again. Check for salt and add if needed.

  6. Bring the mixture to a boil then reduce heat to medium low and cover. Simmer for about 15 minutes.

  7. Serve and garnish the soup with your choice of toppings.
