Bean Gorditas (Gorditas de Frijol)

Ingredients

  • 2 cups Maseca for tortillas
  • 1/3 cup all purpose flour
  • 1 tsp salt
  • 1 2/3 cups hot water plus 2 tbs
  • 1/3 cup oil for frying
  • 1 1/2 cups refried beans warmed

Instructions

  1. In a bowl, combine the maseca, flour, and salt. mix well.

  2. Slowly add the water while mixing with your hand until a smooth, moist dough forms.

  3. Cover the dough and let it rest for 25 minutes.

  4. Divide the dough into 8 equal balls.

  5. Gently pat each ball into a patty that is 2–3 times thicker than a tortilla.

  6. Heat a skillet or griddle over medium heat.

  7. Cook the gorditas for 2–3 minutes per side, until lightly golden.

  8. Transfer the cooked gorditas to a plate.

  9. Add enough oil to the skillet to cover the bottom and heat over medium heat.

  10. Fry 2 gorditas at a time for about 1 minute per side, until they puff up.

  11. Drain on paper towels and let cool for a few minutes.

  12. Carefully slice each gordita open and fill with refried beans and any other toppings you may desire.
