These delicious ground beef enchiladas are something the whole family will enjoy!

Ingredients

  • enchilada sauce
  • 14 corn tortilllas
  • 2 cups cheddar jack cheese shredded

For the beef filling

  • 1 lb ground beef
  • 1 onion diced
  • 1 tsp salt
  • 1/2 tsp black pepper ground
  • 1/2 tsp cumin ground
  • 3/4 tsp onion powder
  • 3/4 tsp garlic powder

Instructions

  1. In a pot over medium heat brown the ground beef and diced onion. Halfway through browning add the seasonings and stir. This will take about 7 minutes.

  2. Drain the ground beef on a paper towel lined plate and set aside

  3. Add enough oil for frying in a skillet and heat it over medium high heat.

  4. Once the oil is hot quickly fry the tortillas on each side. Then transfer them to a paper towel lined plate to drain.

  5. Take a tortilla and spoon a little of the beef filling into the center. Roll it up and place it in a 9x13 baking dish. Repeat with the remaining tortillas.

  6. Pour the enchilada sauce over top of the enchiladas evenly and top with the shredded cheese.

  7. Bake at 350 for 10 minutes or until the cheese has melted.
