Spicy Asian Cucumber Salad

Ingredients

  • 2 English cucumbers thinly sliced
  • 1/2 cup rice vinegar
  • 2 tbs sesame oil
  • 2 tbs toasted sesame seeds
  • 1 tbs crushed red pepper flakes
  • 1 tbs soy sauce
  • 1 tbs brown sugar
  • salt to taste

Instructions

  1. Add the thinly sliced cucumbers to a large glass bowl.

  2. In a measuring cup, mix together the rice vinegar, sesame oil, toasted sesame seeds, crushed red pepper flakes, soy sauce and brown sugar.

  3. Pour the mixture over the cucumbers. Mix well with a pair of tongs to make sure the cucumbers are evenly coated.

  4. Give the cucumbers a taste and check for salt. Add some if desired. Adjust the other seasonings as needed.

  5. Serve the cucumbers immediately or chill for 30 minutes before serving.
