Ingredients

  • 1 lb chicken tenderloins
  • 2 tbs olive oil
  • 1 1/2 tsp blackened seasoning
  • 8 corn tortillas

For garnishing

  • 2 roma tomatoes chopped
  • 1 avocado diced
  • 1/2 red onion sliced
  • 2 limes freshly cut

Instructions

  1. Put the chicken tenderloins in a large bowl. Add 1 tbs of olive oil and the blackened seasoning to the bowl and rub into the chicken until well coated.

  2. Heat the remaining oil in a skillet over medium high heat.

  3. Once hot, add the chicken and cook for 5 minutes. Do not move the chicken.

  4. Next, flip the chicken and cook for 5 more minutes without moving it.

  5. Transfer the blackened chicken tenders to a cutting board and let rest for about 5 minutes. Then chop it into bite sized pieces.

  6. Warm the corn tortillas in the microwave. Fill the corn tortillas with chopped chicken. Then top with the garnishes.

  7. Squeeze the fresh cut limes over the tacos and serve.
