Ingredients

  • 1/2 lb Mexican chorizo
  • 5 eggs

Instructions

  1. Crack the eggs into a bowl and beat them with a fork for a couple of minutes. Set aside.

  2. Remove the chorizo from their casings and put them in a skillet.

  3. Heat the up the skillet over medium high heat.

  4. Crumble the chorizo into small pieces with a spatula while it's cooking. It'll take about 8 minutes to fully cook.

  5. Then transfer the cooked chorizo to a paper towel lined plate to drain.

  6. Reduce heat to medium low and add the eggs to the skillet.

  7. Add the chorizo back to the skillet with the eggs.

  8. Stir the chorizo and eggs together.

  9. Continue to stir until the eggs are fully cooked. This will take about 5 minutes.
