Horchata de coco is an amazingly delicious and refreshing agua fresca that's perfect for the summer time.

Ingredients

  • 1 cup long grain white rice
  • 1 cinnamon stick broken into pieces
  • 9 cups water
  • 1 cup sweetened flaked coconut
  • 13.5 oz coconut milk
  • 12 oz evaporated milk
  • 14 oz sweetened condensed milk
  • 1/2 cup sugar
  • 1 tbs Mexican vanilla blend

Instructions

  1. Soak the rice and cinnamon in 5 cups of water overnight.

  2. Pour the flaked coconut in the blender.

  3. Add the rice, cinnamon and the soaking water to the blender

  4. Blend for 2 minutes.

  5. Strain into a pitcher. Use a spoon to push the liquid through the strainer. Discard what's left in the strainer.

  6. Pour the sugar, coconut milk, evaporated milk and sweetened condensed milk into the blender.

  7. Blend for 1 minute. Then strain into the pitcher.

  8. Add the rest of the water and vanilla to the pitcher and stir.

  9. Chill in the refrigerator. Serve over ice.
