Horchata de coco is an amazingly delicious and refreshing agua fresca that's perfect for the summer time.
Soak the rice and cinnamon in 5 cups of water overnight.
Pour the flaked coconut in the blender.
Add the rice, cinnamon and the soaking water to the blender
Blend for 2 minutes.
Strain into a pitcher. Use a spoon to push the liquid through the strainer. Discard what's left in the strainer.
Pour the sugar, coconut milk, evaporated milk and sweetened condensed milk into the blender.
Blend for 1 minute. Then strain into the pitcher.
Add the rest of the water and vanilla to the pitcher and stir.
Chill in the refrigerator. Serve over ice.
