Ingredients

  • 5 eggs beaten
  • 1/2 onion thinly sliced
  • 1 jalapeno sliced
  • 3 roma tomatoes chopped
  • 2 tbs oil
  • salt to taste

Instructions

  1. Heat up oil in a skillet over medium heat.

  2. Add the onion and jalapeno. Cook for about 5 minutes or until softened.

  3. Add the tomatoes and cook for about 3-4 minutes or until softened.

  4. Add the eggs. Stir them often with a spatula until the eggs are set. This will take about 7 minutes. Salt to taste.

  5. Serve and enjoy!
