Arroz con pollo

Arroz con pollo is a flavorful meal of chicken and rice. The whole family will enjoy it!

Ingredients

  • 1 cup long grain white rice
  • 5 boneless skinless chicken thighs
  • 1 roma tomato
  • 1/4 piece of white onion
  • 2 garlic cloves
  • 1 tbs salt
  • 1/2 tsp ground cumin
  • 1/2 tsp black pepper
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/2 tsp chicken bouillon
  • 1 1/2 tbs Mrs. Dash seasoning
  • 3 tbs vegetable oil
  • 1 red bell pepper chopped
  • 1 packet Sazon Goya with azafran
  • 1 1/2 cup water

Instructions

  1. Blend the tomato, onion, garlic cloves 1/2 tbs of salt and water in a blender until smooth. Set aside for later use.

  2. Put the chicken in a large bowl and season it with the Mrs. Dash seasoning and 1/2 tbs of salt

  3. Heat up 2 tbs of oil in a skillet over medium heat. Once the oil is hot add the seasoned chicken thighs.

  4. Cook the chicken on each side for 5 minutes.

  5. Then cover and reduce the heat to low and continue cooking for 20 minutes.

  6. Once the chicken is done transfer it and it's juices to a large bowl.

  7. In the same skillet add 1 tbs of oil and turn heat to medium.

  8. Add the rice to the skillet and toast till it's a golden color. about 5-7 minutes.

  9. Next add the chopped bell pepper, blended tomato sauce, ground cumin, black pepper, onion powder, garlic powder, chicken bouillon and the packet of Sazon Goya. Give it a stir.

  10. Return the chicken and it's juices to the skillet and bring it to a boil over medium high heat. Then reduce to low and cover. Cook for 20 minutes.

  11. Fluff the rice with a fork.

  12. Serve and enjoy!
