Homemade beef taquitos are made from simple ingredients yet full of flavor!
Brown the ground beef in a pot over medium heat. Then transfer to a paper towel lined plate to drain.
Heat up the oil in the same pot over medium heat. Once hot add the onion and garlic.
Cook onion and garlic for one minute then add the tomatoes. Continue cooking for 5-7 more minutes.
Return the ground beef back to the pot along with the oregano leaves, ground cumin, onion powder, garlic powder, salt and pepper. Stir well. Let simmer for about 10 minutes.
Put the peeled and chopped potatoes in a pot with enough water to cover them. Bring to a boil. Boil them until tender. This will take 10-15 minutes.
Drain the potatoes and start mashing them. Once they're mashed up real good add them to the pot with the ground beef and mix well. Set mixture aside.
Heat tortillas up on a skillet over high heat for about 15 seconds on each side or until pliable. Then set tortillas aside on a plate.
Take one tortilla and fill it with one spoonful of the beef and potato filling. Roll up the tortilla and secure it with a toothpick. Repeat with the remaining tortillas.
Heat up enough oil to totally submerge the taquitos over medium high heat.
Once oil is hot fry 3-4 tortillas at a time until they turn a golden color. This will only take a couple of minutes.
Transfer fried taquitos to a paper towel lined baking sheet to drain. Fry the remaining taquitos.
Garnish the taquitos with your favorite toppings and serve.
