Bean and Cheese Pupusas

Bean and cheese pupusas are the ultimate comfort food.  They're filled with flavorful refried beans  and delicious mozzarella cheese.

Ingredients

  • 2 cups Maseca
  • 1/2 tsp salt
  • 1 1/2 cup water warm
  • mozzarella cheese shredded
  • 1 cup refried black bean
  • vegetable oil as needed

Instructions

  1. Add the Maseca and salt to a mixing bowl and mix well.
  2. Slowly add the warm water to the bowl and mix with your hand until you have a moist and soft dough.
  3. Divide the dough into 6 even sized balls.
  4. Cut through the sides of a ziploc bag making a flap. Then put one of the dough balls inside the bag.
  5. Use a heavy pot to flatten the ball.
  6. Add a tablespoon full of refried beans to the center of the pupusa and top with the shredded cheese.

  7. Fold the pupusa as if making an empanada.

  8. Shape it back into a ball.

  9. Put the ball back into the bag and flatten it. Don't flatten it too thin. It should be thick.

  10. Heat up a skillet over medium heat. Coat the skillet with oil.

  11. Once the oil is hot add the pupusa.

  12. Cook for 3-4 minutes then flip and cook for an additional 3-4 minutes.

  13. Transfer cooked pupusa to a paper towel lined plate. Repeat above steps with the remaining five balls.
