This incredibly easy mole recipe is a favorite of ours! Serve it over cooked chicken with a side of rice!
Empty the mole into a pot over medium low heat.
Slowly stir in 3 cups of chicken broth. Stir continuously for about 10 minutes until you have a smooth sauce and there are no more lumps of mole paste.
Add the chocolate to the sauce and raise the heat to medium. Stir until the chocolate has dissolved. Let the sauce come to a low boil and simmer for a few minutes.
Serve the mole over cooked chicken. When cool refrigerate any leftovers.
