This is the best carnitas recipe ever! It is certainly a crowd pleaser!
Season the cut up pieces or pork well with salt and pepper.
Heat up the olive oil in a cast iron skillet over medium heat.
Once the oil is hot go ahead and brown the pieces of pork on all sides. Do a few pieces at a time to avoid crowding the pan.
Preheat the oven to 275.
Transfer the pork to a casserole dish.
Add the garlic, onion, oregano, and coca-cola to the dish as well.
Cover tightly with foil and bake in oven for about three hours or until the pork shreds apart easily.
Take out the pork and remove the foil. Remove the garlic, onion and any fat. Shred the meat and turn on the broiler.
Return the dish to the oven under the broiler.
Let it broil for a few minutes then take the dish out and stir the carnitas.
Return the dish back to the broiler and repeat the above step until the carnitas reach their desired level of crispiness.
Serve carnitas with warm corn tortillas and your favorite salsa or garnishes.
