Ingredients

  • 1 ham hock
  • 2 cups of pinto beans
  • 1 small white onion diced
  • 11 cups of water
  • 1/4 - 1/3 cup brown sugar
  • salt and pepper to taste

Instructions

  1. Bring the ham hock and water to a boil. Reduce heat to medium low.
  2. Cover and simmer for 1 hour.
  3. Add beans and onion to pot.
  4. Bring to a boil. Cover and reduce heat to medium low.
  5. cook for about 3-4 hours or until beans are soft.
  6. Season with salt and pepper to taste.
  7. Add brown sugar and cook an additional 15 min.
  8. Serve over rice or as is.
