Enchiladas Rojas

These enchiladas rojas are a tasty and simple meal that are perfect to make for meatless Mondays!

Ingredients

  • 14 corn tortillas
  • vegetable oil (enough for frying)
  • 16 oz. bag of mozzarella cheese
  • Enchilada Sauce

Instructions

  1. In a pan or skillet over medium high heat, heat up enough oil for frying.

  2. Fry the tortillas one at a time for a couple of seconds on each side.

  3. Drain the tortillas on a paper towel lined plate.
  4. Dip the tortillas in the enchilada sauce and fill with cheese. Then roll up.
  5. Heat enchiladas in the microwave to melt the cheese.
  6. Serve.
