Arroz Mexicano (Mexican Rice)

Ingredients

  • 1 cup rice
  • 8.5 oz can of sweet peas drained
  • 1 carrot chopped into small pieces
  • 2 roma tomatoes chopped
  • 1/4 piece of white onion
  • 2 garlic cloves
  • 2 teaspoons Knorr chicken bouillon
  • 2 tablespoons olive oil
  • 1 3/4 cup water

Instructions

  1. Blend the tomatoes, onion, garlic, chicken bouillon and water in a blender until well blended. Set aside.

  2. Heat the oil in a pot over medium heat when hot add the rice.
  3. Fry until rice is golden brown.
  4. Add the blended tomato sauce, peas and carrot to the pot and stir once.

  5. Taste for salt and add if needed.

  6. Bring to a boil, reduce heat to low. Cover and simmer for about 25 min.

  7. Remove rice from heat and fluff with a fork.
  8. Serve.
