Ingredients

  • 1 cup rice
  • 8.5 oz can of sweet peas drained
  • 1 carrot chopped into small pieces
  • 2 roma tomatoes
  • 1/4 piece of white onion
  • 2 garlic cloves
  • 1 teaspoon salt
  • 2 teaspoons Knorr chicken bouillon
  • 2 1/2 tablespoons olive oil
  • 1 3/4 cup water

Instructions

  1. Blend the tomatoes, onion, garlic, salt and water in a blender until well blended. Set aside.
  2. Heat the oil in a pot over medium heat when hot add the rice.
  3. Fry until rice is golden brown.
  4. Add the blended tomato sauce, peas, carrots, and chicken bouillon to the pot and stir once.
  5. Bring to a boil, reduce heat to low and simmer for about 25 min.
  6. Remove rice from heat and fluff with a fork.
  7. Serve.
