Ingredients

  • 5 gold potatoes peeled and diced
  • 4 roma tomatoes chopped
  • 1/2 white onion sliced
  • 1 jalapeno chopped
  • salt to taste
  • black pepper to taste
  • 1 tsp garlic powder
  • 2 tbs olive oil

Instructions

  1. Heat up the oil in a large skillet over medium heat. Once hot add the potatoes and cook for 5 minutes. Make sure to stir a couple times.

  2. Next add the onion and jalapeno. Season with salt, pepper and the garlic powder and stir. Cook for 3-4 more minutes or until the onion has softened.

  3. Next add the chopped roma tomatoes and stir. Cover and continue to cook for about 10 minutes or until the potatoes are tender.

  4. Check for salt and add more if desired.

  5. Serve and enjoy.
