Fried Cabbage and Smoked Sausage

Ingredients

  • 1 head cabbage
  • 14 oz smoked sausage
  • 1/2 yellow onion
  • salt to taste
  • black pepper to taste
  • 2 tbs olive oil

Instructions

  1. Cut the cabbage and rinse well in a colander and set aside.

  2. Cut the sausage into small slices and dice the onion.

  3. Heat up a large skillet over medium heat. Add half of the smoked sausage in a single layer. Cook for 2-3 minutes on each side or until browned.

  4. Transfer the browned smoked sausage to a paper towel lined plate. Then repeat the above steps with the remaining half of sausage.

  5. Add the olive oil to the skillet. Once hot add the diced onion. Season with salt and pepper and cook for a few minutes.

  6. Next add the chopped cabbage to the skillet. Stir well and season with more salt and pepper.

  7. Cover the skillet and reduce heat to medium low. Cook for 20 minutes or until the cabbage is tender.

  8. Add the smoked sausage to the skillet with the cabbage. Toss with tongs to combine.

  9. Serve and enjoy.
