Beef Stew in Tomato Sauce

Ingredients

  • 1 1/2 lb stew meat
  • 1 cup canned tomato sauce
  • 1/4 onion
  • 3 garlic cloves peeled
  • 1 serrano pepper
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp chicken bouillon
  • 3/4 tsp ground cumin
  • 1/2 tsp oregano
  • 1 bay leaf
  • 2 tbs vegetable oil
  • 1 1/2 cup water

Instructions

  1. Put the stew meat in a large bowl and season with salt. Mix well to make sure the meat is evenly seasoned. Set aside.

  2. Pour the tomato sauce in a blender along with the onion, garlic cloves, serrano pepper, black pepper, chicken bouillon, ground cumin, oregano and water. Blend until smooth and set aside.

  3. Heat up the oil in a skillet over medium high heat. Once hot add half of the stew meat to the skillet and let cook for a few minutes or until browned.

  4. Flip the stew meat and continue to brown on the other side for a few more minutes. Then remove the meat from the skillet. Repeat the above steps with the remaining half of stew meat.

  5. Now add all of the meat to the skillet and pour in the tomato sauce. Also add the bay leaf.

  6. Bring to a boil then reduce heat to medium low and cover. Let cook for about 1 hour and 40 minutes.

  7. The meat should now be tender. Reomve the bay leaf before serving.

  8. Serve with rice and warm corn tortillas.
