Ingredients

  • 2 cups elbow macaroni uncooked
  • (2) 14.5 oz cans of diced tomatoes
  • 1 tbs butter
  • 1 tbs bacon grease
  • 1/4 yellow onion diced
  • 3/4 tsp garlic powder
  • black pepper to taste
  • salt to taste

Instructions

  1. Melt the butter and bacon grease in a large skillet over medium heat.

  2. Add the diced onion to the skillet. Season with salt and black pepper. Cook for a few minutes.

  3. Empty the cans of diced tomatoes into the skillet. Add the garlic powder and stir. Cover and let simmer while you prepare the macaroni.

  4. Bring a large pot of salted water to a boil over high heat. Once boiling add the macaroni and cook to al dente according to the directions on the box.

  5. Drain the macaroni and add it to the skillet of tomatoes and stir.

  6. Taste and season with more salt and pepper if necessary. Simmer for a couple more minutes then remove from heat.

  7. Serve and enjoy.

Recipe Notes

  • Use both butter and bacon grease for the best flavor.
  • Cook the macaroni just to al dente since it will simmer for a couple more minutes with the tomatoes.
  • Season well with salt, pepper and garlic powder for a flavorful dish.
