Sesame Seed Milk (Leche de ajonjolí)

Sesame seed milk is a delicious way to prepare horchata using sesame seeds.

Ingredients

  • 2 cups sesame seeds
  • 1 cinnamon stick
  • 12 cups water
  • 14 oz sweetened condensed milk
  • 1 tsp vanilla extract

Instructions

  1. Heat up a large pan over medium heat. Add the sesame seeds and toast for about 5 minutes while stirring almost constantly.

  2. Immediately transfer the seeds to a large bowl. Break the cinnamon stick into pieces and add it to the bowl along with 6 cups of water. Let the seeds soak for about 3 hours.

  3. Do this next step in 2 batches. Transfer the sesame seeds, cinnamon and water to a blender. Add 2 more cups of water to the blender and blend until smooth.

  4. Strain the blended sesame mixture into a pitcher using a fine mesh strainer. Use the back of a spoon to press the liquid through the strainer.

  5. Stir in the sweetened condensed milk, vanilla extract and the remaining water.

  6. Serve the sesame milk over ice and refrigerate any leftover.

Recipe Notes

  • stir the sesame seeds almost constantly while toasting to prevent burning.
  • After toasting the seeds immediately transfer them to a bowl to prevent further toasting.
  • Use a Mexican cinnamon stick. These break very easily.
  • Use a sweetened condensed coconut milk for a dairy-free version.
