Tacos de Atún (Tuna Tacos)

Ingredients

  • 12 oz canned tuna drained
  • 2 cloves garlic minced
  • 1/4 onion diced
  • 2 tbs oil plus more for frying taco shells
  • 1/4 tsp black pepper ground
  • 1/2 tsp salt
  • 4 chipotles in adobo chopped
  • 1 tbs mayonnaise
  • 2 tbs lime juice
  • 3 tbs cilantro chopped
  • 8 corn tortillas

Instructions

  1. Make the taco shells and set aside.

  2. Heat up the 2 tablespoons of oil in a skillet over medium heat. Once hot add the onion and garlic. Saute for a few minutes. Season with salt and pepper.

  3. And the chopped chipotles and the drained tuna. Stir and cook for a few more minutes.

  4. Remove from heat and add the mayo, cilantro and lime juice. Stir well.

  5. Spoon the tuna filling into the tacos shells and serve.
