This easy tomato soup will soon become a family favorite. Not only does it taste better than the canned stuff but it's such a breeze to make. You can have it ready in less than 20 minutes!
Add the garlic clove, onion and peeled tomatoes to a blender and blend for a couple of minutes.
Heat up a tablespoon of olive oil in a pot over medium heat. When hot add the blended tomato mixture and stir. Then add the chicken broth and stir well.
Bring to a boil over medium heat then reduce heat to low and let simmer covered for about ten minutes.
serve but let cool a bit before eating it will be hot. Garnish with croutons in desired.
