Bunuelos are a popular snack or treat in many Latin American countries and they're so easy to make!
Combine flour, sugar, salt and baking powder in a large mixing bowl and mix well.
Make a well in the flour and add the melted butter, egg and vanilla. Mix well with your hand. The mixture should be crumbly. Add the water a little at a time and continue to mix with your hands for 3-5 minutes then shape into a ball. Let the dough rest for about 30 min.
Divide the dough into 18 evenly shaped balls.
Sprinkle some flour over the surface where you'll be rolling out the dough balls.
Take one ball and flatten it slightly with the palm of your hand. Roll the dough out with a rolling pin. It should be pretty thin. Repeat this with the rest of the balls.
Heat up enough oil for frying in a large skillet over medium heat. While the oil is heating up line a baking sheet with paper towels.
Once oil is hot start frying the bunuelos one at a time. Fry on each side for about 30 seconds or until it turns a golden color.
Transfer the bunuelos to the paper towel lined baking sheet so the oil can drain and immediately sprinkle with cinnamon sugar or powdered sugar.
Serve and enjoy! store the rest of the bunuelos in ziploc bags or in an airtight container.
