Molletes are an easy Mexican snack you can whip up in no time especially by using leftover refried beans!

Ingredients

  • 4 Ciabatta bread
  • 8 tbsp Leftover refried black beans
  • 1 cup mozzarella cheese shredded
  • 1 cup pico de gallo

Instructions

  1. Preheat oven to 350
  2. Place slices of bread on baking sheet and toast for 10 min.
  3. Spread a couple of tbsp of refried beans on each slice of bread.
  4. Top beans with cheese.
  5. return to oven and broil for about a minute until cheese is melted.
  6. Top with pico de gallo and serve.
