Stuffed Bell Peppers Recipe

Ingredients

  • 6 bell peppers
  • 1 onion diced
  • 2 garlic cloves minced
  • 1 cup rice
  • 1 lb ground beef
  • 1 29 oz can tomato sauce
  • a dash of worcestershire sauce
  • 3/4 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • salt and pepper to taste
  • Italian bread crumbs about a teaspoon for each pepper
  • Mozzarella cheese shredded

Instructions

For the meat mixture

  1. Heat a pot over medium heat and brown the ground beef.
  2. Drain the browned ground meat on a paper towel lined plate. leave about 2 tablespoons of grease in the pot.
  3. Add the onion to the pot and cook for 2 min.
  4. Add the garlic and cook until fragrant. (about a min)
  5. Return the meat to the pot and season well with salt and pepper.
  6. Add tomato sauce, Worcestershire, red pepper flakes, and Italian seasoning to the pot.
  7. Stir well. Cover. Cook over low for 20 min

For the Rice

  1. Add 1 cup of rice and 1 teaspoon of salt to a pot with 2 cups of boiling water.
  2. Stir, cover and cook on low for 20 min.
  3. When rice is done stir it into the meat mixture .

For the peppers

  1. Preheat oven to 450
  2. Wash and cut the tops off the peppers.
  3. Scoop out the seeds and membranes.
  4. Place peppers upright in a baking dish and bake for 20 min or until softened.
  5. Remove from oven. Fill each pepper with the meat mixture.
  6. Top each pepper with a teaspoon of Italian breadcrumbs.
  7. Top each pepper with Mozzarella cheese.
  8. Bake at 350 for 15 min or until cheese is melted.
