How to Make Chicken Quesadillas

Chicken quesadillas are the perfect way to use up leftover chicken. Serve with your favorite salsa or even guacamole!

Ingredients

  • 2 tbsp olive oil
  • 1 white onion sliced
  • 1 green bell pepper sliced
  • 1/2 tsp chili powder
  • 1/4 tsp ground cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp salt
  • a few cracks of black pepper
  • 1 1/2 cup shredded chicken
  • 6 flour tortillas
  • shredded cheddar jack cheese

Instructions

  1. Heat two tablespoons of olive oil in a skillet over medium heat. Once hot add the sliced bell pepper and onion.

  2. Lower heat to medium low and saute for about ten minutes to let the bell pepper and onion soften a bit.

  3. Season with the chili powder, ground cumin, garlic powder, onion powder, salt and pepper. Stir well.

  4. Add the chicken and stir well. Continue to cook for about 5 minutes or until the chicken is hot.

  5. In another skillet over medium heat add a flour tortilla.

  6. Sprinkle the tortilla with cheese.

  7. Add a little of the chicken mixture then top with more cheese. Close the quesadilla and flip over and cook for another 20 seconds or until the cheese has melted.

  8. Transfer quesadilla to a plate and cut in half.

  9. Repeat with the remaining tortillas.

  10. Serve with salsa or guacamole
