Scrambled Egg Whites Recipe (Mexican Style)

Ingredients

  • 1/4 of a white onion sliced
  • 1 jalapeno chopped
  • 1 roma tomato chopped
  • 6 egg whites
  • 1 tbs olive oil

Instructions

  1. First crack the eggs and separate the whites from the yolks. Beat the egg whites with a fork for a minute and season with salt.

  2. Heat up the olive oil in a non-stick skillet over medium heat. Once hot add the sliced onion and jalapeño. Sauté them until softened. Next add the tomato and continue to cook for about 5 minutes.

  3. Next turn the heat to medium low and add the egg whites to the skillet. Gently scramble the eggs until cooked through this will take about 4 minutes.

  4. Serve and enjoy.
