Old Fashioned Rice Pudding Recipe

Today I’m going to share with you all a delicious and comforting recipe for old fashioned rice pudding. I hope you all enjoy it!

Friday morning I was feeling absolutely horrible. Unfortunately I still do. I have a awful cold that won’t seem to go away.

As nice as it would be to just stay in bed all day Friday and do nothing I couldn’t because my two little ones still have to eat.

Unfortunately the kitchen was pretty bare because I hadn’t went grocery shopping in awhile but I had some basic ingredients like eggs, milk, rice etc.

I instantly thought of old fashioned rice pudding. It’s delicious and comforting. Just what I needed!

I have another rice pudding recipe on here that you make like. It’s called Arroz con leche.

It’s a Mexican version of rice pudding and doesn’t take as long to cook.

Both versions of rice pudding are great it just depends on what you’re in the mood for.

Now I’m gonna tell you how to make this

Old Fashioned Rice Pudding Steps

While this recipe takes longer to cook than arroz con leche it is just as easy to make!

I start with 1 cup of dry long grain white rice that’s been cooked and cooled.

To make sure the rice pudding doesn’t end up sticking to the casserole dish I like to butter the bottom of it.

Then I transfer the rice to the dish and spread it out and top it with raisins (optional)

Then in a large mixing bowl beat the eggs well then add the milk, sugar and vanilla and stir well.

Now pour this mixture over the rice.

Now its time to bake it at 325 for about 2 hours or until it is lightly browned and set.

After baking make sure to garnish it with ground cinnamon and nutmeg.

That’s all there is to it. It’s very easy!

The great thing about it is you can serve it as breakfast like I did or as a dessert!

Ingredients

  • 1 cup dry long grain white rice
  • 1 tbs butter
  • pinch salt
  • 3 eggs
  • 6 cups milk
  • 1 cup sugar
  • 2 teaspoons vanilla extract
  • ground cinnamon and nutmeg for garnishing

Instructions

  1. Bring rice, butter, salt and 2 cups of water to a boil.
  2. Reduce heat to low and simmer until water is absorbed about 20 min.
  3. Remove rice from heat and let cool down completely.
  4. Once rice has cooled transfer it to a greased or buttered casserole dish.
  5. Top with raisins(optional).
  6. Preheat oven to 325.
  7. In a large mixing bowl beat eggs for about a minute then add the milk, sugar and vanilla and continue to mix until well combined.
  8. Pour the mixture over the rice and bake in oven for about 2 hours or until the pudding is lightly browned and set.
  9. Garnish with ground cinnamon and nutmeg.
